

Lebanese Layered Fruit Smoothie
Growing up in Lebanon, my all time favourite drink was the Lebanese layered fruit smoothies, or what we call back in Lebanon, fruit cocktails, that you could find at almost every cafe.This classic Lebanese drink is so popular and for good reason. It’s a refreshing and delicious drink that is packed with a variety of fruits.Living in Vancouver now, I’ve missed enjoying this colourful fruit smoothie so I decided to DIY my own – in my true nutriFoodie fashion!I recreated this Lebanese layered fruit cocktail by pureeing three fruits: mango, avocado, and strawberry separately. The flavour combination of these three layers creates the perfect balance; The sweetness from the mangos pairs perfectly with the slightly tart strawberries and creamy avocado…Delicious!So what are you waiting for? If you have kids, get them involved in the process! Your little sous-chefs can help by cutting up fruits and putting the ingredients into the blender. They can even experiment with creating their own unique layer with any fruit you have on hand like peaches or blueberries.Enjoy!

Ingredients
Avocado puree
Strawberry puree
- 2 cups strawberries sliced and frozen
- 1 banana frozen
- ½ cup water
- ¼ cup milk
Instructions
For avocado puree
- 1. In a blender, purée all ingredients to get a creamy runny final product. If too thick, add a splash of water or milk. Set aside for assembly.
For mango puree
- 1. Blend together to get a creamy runny final product. If too thick, adjust consistency with water or milk. Set aside for assembly.
For strawberry puree
- 1. Purée in a blender. If too thick, adjust consistency with water or milk. Set aside for assembly.
Assembly
- 1. Layer strawberry purée, mango purée, and then avocado purée
- 2. Top with chopped fruit. Include any mix of the following: strawberries, banana, mango, raspberries, pomegranate, apple, pear.
