Versatile Crepes

The best versatile crepe recipe that you can make either sweet or savoury! Course: Breakfast; Keyword: crepes, savoury, sweet

Equipment

  • non-stick pan

Ingredients

Dry Ingredients

  • 2 1/2 cups all purpose flour
  • 3 tbsp granulated sugar white or raw
  • pinch salt
  • pinch nutmeg

Wet Ingredients

  • 5 large eggs
  • 1 cup milk of choice
  • 2 cups water
  • 1 tbsp vanilla extract

Instructions

Directions for Prep

  • Mix dry ingredients in a large-sized mixing bowl
  • Whisk wet ingredients in a medium-sized mixing bowl
  • Make a well in the dry ingredients (flour mixture), and add in the wet ingredients
  • Whisk all ingredients well. Cover and set aside in the fridge to sit for at least 30 minutes and up to 24 hours

Directions for Cooking

  • When you’re ready to cook the crepes, heat up a flat, non-stick pan on medium-high heat.
  • Pour 1/3 cup of the crepe batter. Allow it to cook on one side for about 1 minute until the top looks dry and then using a plastic flipper or turner to flip the crepe on the other side to cook for a few seconds until it’s slightly browned.

Notes

It’s best practice to oil or butter the pan for every 2-3 crepes as they cook better. If they’re starting to burn before they’re fully cooked, that would mean the heat is too high. If they’re taking too long to cook, you might have the heat too low.

Berry Chia Jam

Course: Breakfast; Keyword: berries, chia, jam, sweet

Equipment

  • pot
  • wooden spoon

Ingredients

  • 2 cups frozen mixed berries
  • 3 tbsp chia seeds
  • 1 tbsp water
  • 1 tbsp brown sugar or to taste

Instructions

  • Add ingredients to a small or medium pot. Cover and allow to cook over medium-low heat for 15-20 minutes.
  • Turn off heat and set aside to cool down. Taste and adjust sweetness.

Cinnamon Apples

Course: Breakfast; Keyword: apples, cinnamon, crepes, sweet

Equipment

  • pan

  • cutting board
  • knife
  • measuring spoons

Ingredients

  • 2 apples diced
  • 1 tbsp vegetable oil
  • 1 tbsp cinnamon
  • 1 tbsp sugar or to taste

Instructions

  • Add ingredients to a medium sized pan and mix occasionally to cook through until softened.
  • Taste and adjust spices/sweetness to preference.

Cheese and Sauteed Mushrooms

Course: Breakfast; Keyword: cheese, crepes, mushrooms, savoury

Equipment

  • pan
  • cutting board
  • knife
  • measuring cup and spoons

Ingredients

  • 1 cup mushrooms sliced
  • olive oil
  • 1/2 tbsp dried thyme
  • salt to taste
  • pepper to taste

Instructions

  • Add mushrooms to a pan over medium heat; drizzle with oil, and add thyme, salt and pepper. Cover and allow to cook for a few minutes until softened.
