Versatile Crepes

The best versatile crepe recipe that you can make either sweet or savoury!
Course: Breakfast
Keyword: crepes, savoury, sweet

  • non-stick pan
  • flipper utensil
  • Mixing bowl
  • measuring cups and spoons

Dry Ingredients

  • 2 1/2 cups all purpose flour
  • 3 tbsp granulated sugar white or raw
  • pinch salt
  • pinch nutmeg

Wet Ingredients

  • 5 large eggs
  • 1 cup milk of choice
  • 2 cups water
  • 1 tbsp vanilla extract

Directions for Prep

  • Mix dry ingredients in a large-sized mixing bowl
  • Whisk wet ingredients in a medium-sized mixing bowl
  • Make a well in the dry ingredients (flour mixture), and add in the wet ingredients
  • Whisk all ingredients well. Cover and set aside in the fridge to sit for at least 30 minutes and up to 24 hours

Directions for Cooking

  • When you're ready to cook the crepes, heat up a flat, non-stick pan on medium-high heat.
  • Pour 1/3 cup of the crepe batter. Allow it to cook on one side for about 1 minute until the top looks dry and then using a plastic flipper or turner to flip the crepe on the other side to cook for a few seconds until it's slightly browned.

It's best practice to oil or butter the pan for every 2-3 crepes as they cook better. If they're starting to burn before they're fully cooked, that would mean the heat is too high. If they're taking too long to cook, you might have the heat too low.
